Potty training & frittata making

Um. Huh?  

Well basically, this is what the end of my week has consisted of.

First things first, potty training. Urine stinks. Literally and well, literally. But Emily is ready. I am ready! I haven't not gone a month without buying a pack of diapers since August of 2008. Four and a half years where 8 of those months two were in diapers. That's good Target spending money there. And I want it. All of it.

Last week we got rid of the diapers (except at nap and bedtime) and gave Brookie's leftover pullups from 2010 a try. She did pretty well with them, with only a few accidents. However, pull ups are absorbent and still more than likely felt like a diaper to her. Not what we wanted. So yesterday morning a friend of mine emailed me the 3 day potty training book, and we haven't looked back since. We pitched all the diapers. All the pull ups. Pulled out all the big girl undies. And prepared ourselves for a messy 3 days at home. 
The morning of day 1, I wanted to quit. And shower. She went through 4 pairs of undies in under an hour & would tell me she had to pee after already doing so. Add in a curious four year old and ADHD labrador, and you can see why I almost had wine for lunch. 

After her afternoon nap though, something clicked. She woke up dry, and stayed dry the rest of the evening. And today? Same undies ALL DAY! She's doing everything in the potty (keeping the TMI ew-factor down here) and even telling us she has to go (although I prompt and ask a good 3820 times a day.)

I couldn't be more proud of this girl.


Now. Frittata making? Sure!

A few weeks ago I had a fridge full of leftovers and was an ingredient or two short for a complete meal. What I did have was a dozen eggs. So kitchen sink frittata it was. And it was delish. I just mixed what I had (leftover cooked sausage, kale, shredded cheese, green pepper, onion, tomato, mushrooms), gave them all a good saute, and mixed beaten eggs with it. Cooked in on low heat until the bottom was done, then put it in a 500 degree oven for about 5-10 minutes. Light, fluffy, and the perfect leftover user upper. 

And since then, I've had it for lunch at least 4 times a week. You really can't mess it up. My favorite being spinach, cheddar, and egg whites (with 1 whole egg.) All the food on the plate above? Only 7 Weight Watchers points. Yep, even with all that delicious butter slabbed onto the muffin. 

So. Potty training and frittata making. Yep. This is my life. (G to the L to the amorous.)

  1. Way to go. I really need to do this with lennox when we get back from vacation... She will pee in the potty but not #2.... hopefully that will click once we use undies! good luck, hope it keeps going well :)

  3. I am SO jealous that the 3 day is working for you. And super excited for you of course!!! It was a total and complete fail over here. Keep up the good work Emmy! Diapers are expensive. (oh lord i'm going to be paying for 2 soon.... help me jesus!)
